When I think of "sweet potato casserole", I think of that sickly-sweet marshmallow topped dish made around Thanksgiving. This casserole is nothing like that casserole. I was drawn into trying it because it's fairly healthy and orange sweet potatoes usually make the lists of "super foods" that nutrition and diet websites like to compile. I also like mashed sweet potatoes, but I usually sweeten those to the point of not being healthy any more.
I found this recipe on the SparkPeople web site I sometimes use to track my calories and exercise. It approaches sweet potatoes as a starch and makes them spicy instead of sweet. While I don't think this recipe is perfect, it is certainly a starting point for tasty sweet potatoes.
I had to bake for twice as long as the original recipe probably because I don't have a covered 9x13-inch pan and had to use a dutch oven instead. Also, I'm not sure the cheese added much of anything to the flavor, so I would probably skip it next time.
