Yummy Pesto

This recipe comes from How to Cook Everything by Mark Bittman. It's our go-to book when we want to make something. This recipe has the right balance of oil, nuts, and spices, IMO. It takes a lot of basil, so make it when basil is in season, or it's way too expensive to make.

Ingredients

  • 2 cups fresh basil leaves (packed tightly)
  • 4 cloves garlic
  • 1/2 cup pine nuts
  • 1/2 cup olive oil
  • 1/4 grated parmesan cheese
  • 3/4 tsp salt
  • 1/2 tsp pepper

Directions

  1. Combine ingredients and puree in a food processor or blender.
