Spinach Bake

My friend Mady swears by this recipe as an appetizer (freezes well, reheats well). In her cookbook, it's called a "Spinach Brownie", but everyone, including me, found the name so off-putting that I've renamed it. I haven't yet tried this one, but Mady loves it.

Ingredients

  • 1 cup flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 2 eggs, beaten
  • 1 cup milk
  • 1/4 cup butter, melted
  • 1/2 medium onion, chopped
  • 10 ounces frozen, chopped spinach thawed and drained
  • 1 pound cheddar cheese, grated

Directions

  1. Preheat oven to 350 degrees.
  2. Grease a 13x9x2-inch pan.
  3. Mix flour, salt, baking powder, eggs, milk, and butter.
  4. Add onion, spinach, and cheese. Pour into prepared pan.
  5. Bake for 30 to 35 minutes.

Note If frozen, defrost and bake for 10 minutes.
