Spinach Bake
My friend Mady swears by this recipe as an appetizer (freezes well, reheats well). In her cookbook, it's called a "Spinach Brownie", but everyone, including me, found the name so off-putting that I've renamed it. I haven't yet tried this one, but Mady loves it.
Ingredients
- 1 cup flour
- 1 tsp salt
- 1 tsp baking powder
- 2 eggs, beaten
- 1 cup milk
- 1/4 cup butter, melted
- 1/2 medium onion, chopped
- 10 ounces frozen, chopped spinach thawed and drained
- 1 pound cheddar cheese, grated
Directions
- Preheat oven to 350 degrees.
- Grease a 13x9x2-inch pan.
- Mix flour, salt, baking powder, eggs, milk, and butter.
- Add onion, spinach, and cheese. Pour into prepared pan.
- Bake for 30 to 35 minutes.
Note If frozen, defrost and bake for 10 minutes.
