Russian Teacakes

These are not super-sweet (except for the outside) and taste like nutty shortbread. They're very tasty. Makes about 4 dozen cookies.

Ingredients

  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla
  • 2 1/4 cups all-purpose flour
  • 3/4 cup finely chopped nuts (I use almonds, but pecans are also tasty)
  • 1/4 tsp salt
  • Powdered sugar (for rolling in)

Directions

  1. Heat oven to 400 degrees F.
  2. Mix butter, 1/2 cup powdered sugar, and the vanilla in a large bowl.
  3. Stir in flour, nuts, and salt until dough holds together.
  4. Shape into 1-inch balls. Place about 1 inch apart on ungreased cookie sheet.
  5. Bake 10 to 12 minutes or until set but not brown.
  6. Roll in powdered sugar while warm.
  7. Cool and roll in powdered sugar again.
