Ratatouille

Ingredients

  • 1 small onion, thinly sliced
  • 1/4 cup olive oil
  • 3 small zucchini, cut into 1/8" slices
  • 4 medium tomatoes, peeled and chopped
  • 2 medium red peppers, chopped
  • 1 clove garlic, finely chopped
  • 1/2 tsp sugar
  • 1/4 tsp white pepper
  • 1/8 tsp dry mustard
  • 1 tsp lemon juice
  • 1/4 cup parsley, chopped

Directions

  1. Cook and stir onion sliced in oil until tender.
  2. Stir in remaining ingredients except parsley.
  3. Reduce heat; cover and simmer 3 minutes.
  4. Uncover and cook over medium heat, stirring constantly, until liquid is evaporated. (Watch carefully.)
  5. Turn into serving dish and sprinkle with parsley.
