Old Fashioned Rice Pudding

Ingredients

  • 4 1/2 cups milk
  • 3/4 cup uncooked long-grain rice (not converted)
  • 1 large egg
  • 1/2 cup granulated sugar
  • 2 tsp vanilla
  • 1/2 tsp salt
  • cinnamon

Directions

  1. Warm the milk in a medium-sized saucepan over mediu-low heat.
  2. Stir in rice. Bring to a simmer and cook, uncovered, stirring fequently, until the rice is very tender, about 35 minutes.
  3. In a medium-sized bowl, whisk together the egg, sugar, vanilla, and salt.
  4. Grdually stir in some of the rice mixture until well blended.
  5. Return the mixture to the saucepan and stir over medium-low heat for 1 minute to cook the egg.
  6. Pour the mixture into 6 custard cups and sprinkle with cinnamon.
  7. Refrigerate for 1 hour or until chilled.
