Banana Bread
This recipe comes from one of Mady's cookbooks.
Ingredients
- 1 1/3 cups sugar
- 2 eggs
- 1 stick butter
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup plus 2 Tbsp pineapple, orange, or lemon juice (Mady recommends orange)
- 1 cup mashed bananas
- 1/2 cup chopped nuts (optional)
Directions
- Preat oven to 375 degrees F.
- Grease a 9x5x3-inch loaf pan.
- Cream sugar, eggs, and butter.
- Combine dry ingredients and add alternately with fruit juice. Add banana and nuts.
- Beat until just blended.
- Pour batter into prepared pan.
- Baked until tester comes out clean and top is browned.
Variation
- Bake in two greased 8x8-inch pans. Bake for only 25 minutes. Serve plain or frost with your favorite frosting.
