Banana Bread

This recipe comes from one of Mady's cookbooks.

Ingredients

  • 1 1/3 cups sugar
  • 2 eggs
  • 1 stick butter
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup plus 2 Tbsp pineapple, orange, or lemon juice (Mady recommends orange)
  • 1 cup mashed bananas
  • 1/2 cup chopped nuts (optional)

Directions

  1. Preat oven to 375 degrees F.
  2. Grease a 9x5x3-inch loaf pan.
  3. Cream sugar, eggs, and butter.
  4. Combine dry ingredients and add alternately with fruit juice. Add banana and nuts.
  5. Beat until just blended.
  6. Pour batter into prepared pan.
  7. Baked until tester comes out clean and top is browned.

Variation

  • Bake in two greased 8x8-inch pans. Bake for only 25 minutes. Serve plain or frost with your favorite frosting.
