Apple Cake

Another from Mady's cookbook.

Ingredients

  • 3 cups peeled, cored, and diced apples
  • 3 tsp cinnamon
  • 5 Tbsp sugar plus 2 cups (divided)
  • 3 cups flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 cup oil
  • 4 eggs, beaten
  • 1/4 cup orange juice
  • 1 tsp vanilla

Directions

  1. Preaheat oven to 325 degrees F.
  2. Grease and flour 10-inch Bundt pan.
  3. In 1 quart bowl, mix apples, cinnamon, and 5 tablespoons of the sugar.
  4. In a large bowl, mix flour, remaining sugar, baking powder, and salt.
  5. Make a well in the dry ingredients and add oil, eggs, orange, juice, and vanilla.
  6. Mix with a spoon until well blended.
  7. Pour 1/2 of the batter into the prepared pan. Add all of the apple mixture. Pour in the remaining batter.
  8. Bake until the top is firm and golden and a cake tester inserted in the center comes out dry.
