Apple Cake
Another from Mady's cookbook.
Ingredients
- 3 cups peeled, cored, and diced apples
- 3 tsp cinnamon
- 5 Tbsp sugar plus 2 cups (divided)
- 3 cups flour
- 3 tsp baking powder
- 1 tsp salt
- 1 cup oil
- 4 eggs, beaten
- 1/4 cup orange juice
- 1 tsp vanilla
Directions
- Preaheat oven to 325 degrees F.
- Grease and flour 10-inch Bundt pan.
- In 1 quart bowl, mix apples, cinnamon, and 5 tablespoons of the sugar.
- In a large bowl, mix flour, remaining sugar, baking powder, and salt.
- Make a well in the dry ingredients and add oil, eggs, orange, juice, and vanilla.
- Mix with a spoon until well blended.
- Pour 1/2 of the batter into the prepared pan. Add all of the apple mixture. Pour in the remaining batter.
- Bake until the top is firm and golden and a cake tester inserted in the center comes out dry.
