Lentil Shepherd's Pie
I made this with green beans, mushrooms, and carrots instead of the mixed vegetables.
Ingredients
- 2 Tbsp vegetable oil
- 3/4 cup chopped onions
- 1 clove garlic, minced
- 2 Tbsp all-purpose flour
- 1 1/3 cups vegetable broth
- 1/4 tsp dried thyme
- 1/8 tsp salt, or to taste
- 1/8 tsp pepper
- 2 cups cooked lentils
- 1 10-oz package frozen mixed vegetables
- 2 cups mashed potatoes
Directions
- Preheat the oven to 350 degrees F. Grease a 9x5x3-inch loaf pan.
- In a 1 1/2-quart saucepan, heat the oil over medium-high heat. Add the onions and garlic; cook, stirring, until softened, about 2 minutes. Stir in the flour until absorbed. Add the broth, thyme, salt, and pepper. Cook, stirring, until mixture comes to a boil. Stir in the lentils and mixed vegetables. Spoon into pan.
- Spoon the potatoes in a layer around the edges of the pan.
- Bake 40 minutes or until potatoes brown on top.
