Lamb Curry

Curried Lamb is a wonderful curried dish. Pork can be used insead of Lamb. The curry is served on rice, then topped with an assortment of condiments. Usual condiments are, onions, peanuts, cashews, rasins, coconut and Chutney.

Ingredients

  • 2 lbs Lamb or pork
  • 2 Tbs Butter
  • 1 Tbs Oil
  • 1 cup chopped onions
  • 2 cloves of garlic chopped
  • 2 Tbs Curry powder
  • 1 tsp ginger
  • 2 cans of (diced?) tomatoes and their juice
  • 1 cup tomato juice
  • 3 Tbs flour

Directions

  1. Chop meat into bite sized pieces.
  2. Fry onions and garlic in oil and butter in a skillet over medium heat till translucent.
  3. Add meat to skillet and cook until browned.
  4. Add tomatoes (but not the juice), curry powder and ginger.
  5. Simmer for 1/2 hour or until meat is tender.
  6. Prepare the rice according to package directions.
  7. Add the tomato juice and flour to pan and cook for 5 to 10 minutes.
  8. Ladle curry onto cooked rice.
  9. Add condiments to taste and enjoy.
