Honey Cake

A tradition for Litha (summer solstice).

Ingredients

  • 1 1/2 cups sugar
  • 1 cup honey
  • 1/2 cup oil (I'll use butter, melted and cooled)
  • 3 eggs
  • 2 1/2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp ground cloves
  • 1 1/2 tsp ground allspice
  • 1/4 tsp ground nutmeg
  • 2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1 cup coffee
  • 3/4 cup chopped walnuts or almonds

Directions

  1. Preheat oven to 350 degrees
  2. Grease and line the bottom of a 10x4-inch tube pan with waxed or parchment paper.
  3. Combine sugar, honey, and oil (or butter).
  4. Add eggs one at a time, mixing well after each addition.
  5. In a separate bowl, mix flour, baking powder, baking soda, and spices.
  6. Alternately add dry ingredients and coffee to batter. Mix well.
  7. Stir in chopped nuts.
  8. Pour into prepared pan.
  9. Bake 40 to 45 minutes or until toothpick inserted near the center comes out clean.
