Green Jell-o Salad
A Thanksgiving tradition in my childhood. Tasty, but since I can't eat the whole thing myself, I rarely make it.
Ingredients
- 1 can crushed pineapple
- 1 pkg. lime Jell-o mix
- 1/2 pkg. small cottage cheese container (small curd, too)
Directions
- Drain the pineapple, reserving the juice.
- Add water to the pineapple juice to total the amount needed for the Jell-o recipe. (Use a little less than that amount for a firmer salad since the pineapple itself has some juice in it.)
- Make the Jell-o, according to the package directions, using the pineapple/water mixture instead of water.
- Add pineapple and cottage cheese to heated Jell-o mixture.
- Chill until Jell-o has set.
