Gooey Chocolate Chashew Bars

Ingredients

  • Crust
  • 1 1/2 cups all-purpose flour
  • 1/2 cup butter, softened
  • 1/4 cup firmly packed brown sugar
  • Topping
  • 1 1/2 cups salted cashews, coarsely chopped
  • 1 1/2 cups semi-sweet chocolate chips
  • 3/4 cup sugar
  • 3/4 cup dark corn syrup
  • 3 eggs, slightly beaten
  • 3 Tbsp butter, melted
  • 2 tsp vanilla

Directions

  1. Heat oven to 350 degrees. Combine all crust ingredients in small mixer bowl. Beat at low speed until mixture resembles coarse crumbs.
  2. Press crust mixture onto bottom of ungreased 13x9 inch baking pan. Bake for 15 minutes until edges are lightly browned.
  3. Meanwhile, stire together all topping ingredients; mix well. Spread topping over hot, partially baked crust. Continue baking for 28 to 33 minutes or until set. Cool completely. Cut into bars. Cover; store refrigerated.
