Gingerbread Lemon Bars
I have not tried this recipe, but I have eaten the results at a party.
Ingredients
Gingerbread crust
- 1/3 cup molasses
- 1/4 cup packed brown sugar
- 2 Tbsp shortening
- 3 Tbsp cold water
- 1 3/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1 1/4 tsp pumpkin pie spice
- 1/4 tsp salt
Lemon filling
- 1 cup granulated sugar
- 1 Tbsp grated lemon peel
- 3 Tbsp lemon juice
- 1/4 tsp baking powder
- 1/4 tsp salt
- 3 large eggs
- Confectioner's sugar
- Candied ginger
Directions
- Preheat oven to 350 degrees F.
- Grease a 13x9x2-inch pan.
- To prepare gingerbread, stir together molasses, brown sugar, and shortening in a large bowl.
- Stir in cold water.
- Blend in flour, baking soda, pumpkin pie spice, and salt.
- Press dough onto the bottom and 1/4 inch up the sides of the pan.
- Bake for 10 minutes.
- Meanwhile, prepare the filling.
- In a bowl, beat sugar, lemon peel, lemon juice, baking powder, salt, and eggs with a wire whisk for about 1 minute, or until well mixed.
- Pour over hot crust.
- Bake for 20-25 minutes, or until set.
- Let cool completely.
- Sprinkle with confectioner's sugar. Decorate with bits of candied ginger, pressing them firmly into the topping.
