Gingerbread Lemon Bars

I have not tried this recipe, but I have eaten the results at a party.

Ingredients

Gingerbread crust

  • 1/3 cup molasses
  • 1/4 cup packed brown sugar
  • 2 Tbsp shortening
  • 3 Tbsp cold water
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 1/4 tsp pumpkin pie spice
  • 1/4 tsp salt

Lemon filling

  • 1 cup granulated sugar
  • 1 Tbsp grated lemon peel
  • 3 Tbsp lemon juice
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • Confectioner's sugar
  • Candied ginger

Directions

  1. Preheat oven to 350 degrees F.
  2. Grease a 13x9x2-inch pan.
  3. To prepare gingerbread, stir together molasses, brown sugar, and shortening in a large bowl.
  4. Stir in cold water.
  5. Blend in flour, baking soda, pumpkin pie spice, and salt.
  6. Press dough onto the bottom and 1/4 inch up the sides of the pan.
  7. Bake for 10 minutes.
  8. Meanwhile, prepare the filling.
  9. In a bowl, beat sugar, lemon peel, lemon juice, baking powder, salt, and eggs with a wire whisk for about 1 minute, or until well mixed.
  10. Pour over hot crust.
  11. Bake for 20-25 minutes, or until set.
  12. Let cool completely.
  13. Sprinkle with confectioner's sugar. Decorate with bits of candied ginger, pressing them firmly into the topping.
