Florentine Cookies

These cookies take a long time to assemble, but they are elegant and extremely tasty. I usually make them for the Christmas party at work. Yield: 3 dozen sandwich cookies

Ingredients

  • 2/3 cup butter
  • 2 cups quick oats
  • 1 cup granulated sugar
  • 2/3 cup flour
  • 1/4 cup light corn syrup
  • 1/4 cup milk
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 2 cups (1 12-oz package) semi-sweet chocolate chips

Directions

  1. Preheat oven to 375 degrees.
  2. Melt butter in medium saucepan; remove from heat.
  3. Sitr in oats, granulated sugar, flour, corn syrup, milk, vanilla, and salt; mix well.
  4. Drop by level teaspoon about 3 inches apart onto foil-lined baking sheets.
  5. Spread thinly with a rubber spatula.
  6. Bake for 6 to 8 minutes or until golden brown.
  7. Cool completely on baking sheets on wire racks.
  8. Peel foil from cookies.
  9. Melt chocolate chips in the microwave: 1 minute on 70% power, stir. Microwave in additionaly 10 to 20 second intervals until smooth.
  10. Spread thin layer of melted chocolate onto flat side of half the cookies. Top with remaining cookies, placing flat side against chocolate.
