Dog Biscuit Cookies

Also known as "Pecan-Wheat Germ Cookies" by more serious folks. I think I got this recipe from a cookbook that let you make dog biscuits that humans could also eat. They look really cool when cut with a tiny dog-bone shaped cookie cutter.

Ingredients

  • 1 1/2 cups finely ground pecans
  • 1 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1/2 honey-toasted wheat germ
  • 1/4 tsp salt
  • 3/4 cup (1 1/2 sticks) butter or margarine, softened
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla

Directions

  1. In a medium bowl or on a piece of waxed paper, stir together the pecans, both flours, the wheat germ, and salt.
  2. In a large bowl, cream the butter or margarine; add the sugar and beat until combined. Beat in the egg and vanilla. Using a spoon, mix in the pecan-flour mixture. Form into a ball and wrap in waxed paper. Chill 30 minutes.
  3. Preheat oven to 350 degrees F.
  4. Using a lightly floured rolling pin on a lightly floured surface, roll out the dough (1/2 at a time) until 1/4 inch thick. Cut into cookies with cookie cutters of desired shape.
  5. Place on ungreased baking sheet; bake 12 minutes or until lightly browned.
