Curried Carrot and Apple Salad

This is similar to a curried chicken salad recipe that I just love. So much so that I might just start combining them and just making this recipe with chicken in it. I use hot curry powder and it has a kick, but it's not overpowering. I also use sliced almonds because I didn't have walnuts on hand. I think this recipe improves after chilling for a few hours, so it's great to make ahead for picnics. Source: nutritionovereasy.com

Ingredients

  • 3 Tbsp mayonnaise
  • 1 Tbsp fresh lime juice
  • grated lime peel
  • 1 tsp curry powder
  • 1 large apple, cored (but not peeled) and diced
  • 1 large carrot, shredded
  • 1/3 cup chopped walnuts
  • 1/4 seedless raisins

Directions

  1. In a medium bowl, stir together mayonnaise, lime juice, lime peel, and curry powder.
  2. Add apple, carrot, walnuts, and raisins; stir to combine.
  3. Serve now, or chill for up to a day for the flavors to mellow.
