Cocoa-Coffee Icing

This is a shiny icing rather than a fluffy one. This is enough to frost a dozen cupcakes but for a layer cake or two dozen cupcakes I'd definitely double it. Then you have a better chance to lick out the bowl!!! :-)

Ingredients

  • 4 Tbsp cocoa
  • 1 cup confectioner's sugar
  • 2 Tbsp hot coffee (little more, if necessary)
  • 1 tsp vanilla
  • 2 Tbsp melted butter

Directions

  1. Stir together the cocoa and sugar.
  2. Add the coffee, vanilla, and butter.
  3. Continue beating until well mixed. Let sit for a few minutes until it starts to get stiff (just a little). If it starts to get stiff before you're through icing, add a little more coffee.
