Cinnamon Oatmeal Pancakes
This is a Betty Crocker recipe with my instructions (because I don't like theirs). The texture of these is a little tough, due to the egg and the oatmeal, but the flavor is excellent. I think they would be wonderful topped with warm applesauce, but we didn't have any on hand to try that.
Ingredients
- 1 egg
- 2 Tbsp vegetable oil
- 1 Tbsp packed brown sugar
- 3/4 cup milk
- 1/2 cup all-purpose flour
- 1/2 cup quick-cooking oats
- 3 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- Butter for cooking cakes
Directions
- Start the skillet heating over medium-low heat. Do not add butter.
- Beat the egg and the oil together in a medium bowl.
- Stir in brown sugar. Stir in milk.
- Stir in remaining ingredients. The batter will be thin.
- When skillet is ready, add butter.
- Pour scant 1/4 cup portions of the batter into the pan and cook as usual.
