Cinnamon Oatmeal Pancakes

This is a Betty Crocker recipe with my instructions (because I don't like theirs). The texture of these is a little tough, due to the egg and the oatmeal, but the flavor is excellent. I think they would be wonderful topped with warm applesauce, but we didn't have any on hand to try that.

Ingredients

  • 1 egg
  • 2 Tbsp vegetable oil
  • 1 Tbsp packed brown sugar
  • 3/4 cup milk
  • 1/2 cup all-purpose flour
  • 1/2 cup quick-cooking oats
  • 3 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • Butter for cooking cakes

Directions

  1. Start the skillet heating over medium-low heat. Do not add butter.
  2. Beat the egg and the oil together in a medium bowl.
  3. Stir in brown sugar. Stir in milk.
  4. Stir in remaining ingredients. The batter will be thin.
  5. When skillet is ready, add butter.
  6. Pour scant 1/4 cup portions of the batter into the pan and cook as usual.
