Chorizo Rice and Beans

This is still a work in progress. I've been using chorizo that is spiced enough that I don't add any additional spices, but you may want to add some taco or Mexican seasoning. The leftovers make a pretty good burrito filling as well. This makes 2 large portions or 4 small portions.

Ingredients

  • 0.5 pounds chorizo or other sausage
  • 0.5 cups brown rice (uncooked)
  • 2 cups plus 2 Tbsp water
  • 1 can black beans, rinsed and drained
  • hot sauce to taste

Directions

  1. Combine the water and rice in a large sauce pan. Bring to a boil. Stir once, then cover and simmer for 45 minutes. (Or, cook according to the package directions.)
  2. Cook the sausage in a frying pan, covered with a lid or foil, over low heat. Turn the sausage once or twice while cooking.
  3. When the rice is finished, add the beans to the rice. Cut up the sausage into bite sized pieces and combine with the rice and beans.
  4. Top with hot sauce (if desired) and enjoy!
