Chorizo Rice and Beans
This is still a work in progress. I've been using chorizo that is spiced enough that I don't add any additional spices, but you may want to add some taco or Mexican seasoning. The leftovers make a pretty good burrito filling as well. This makes 2 large portions or 4 small portions.
Ingredients
- 0.5 pounds chorizo or other sausage
- 0.5 cups brown rice (uncooked)
- 2 cups plus 2 Tbsp water
- 1 can black beans, rinsed and drained
- hot sauce to taste
Directions
- Combine the water and rice in a large sauce pan. Bring to a boil. Stir once, then cover and simmer for 45 minutes. (Or, cook according to the package directions.)
- Cook the sausage in a frying pan, covered with a lid or foil, over low heat. Turn the sausage once or twice while cooking.
- When the rice is finished, add the beans to the rice. Cut up the sausage into bite sized pieces and combine with the rice and beans.
- Top with hot sauce (if desired) and enjoy!
