40-Clove Chickpeas and Broccoli

Ingredients

  • 1 pound broccoli, cut into large spears
  • 10 cloves of garlic, smashed
  • 1 15-oz can of chickpeas, drained and rinsed
  • 2 tsp olive oil
  • 1/2 tsp salt
  • freshly-ground black pepper
  • 2 tsp lemon zest
  • 1 1/2 tsp dried oregano
  • 1 cup vegetable broth

Directions

  1. Preheat the oven to 400 degrees F. Place the broccoli, garlic, and chickpeas in a 13x9-inch baking dish. Drizzle them with oil and spray with some non-stick cooking spray. Toss to coat. Sprinkle with salt, pepper, lemon zest, and oregano. Toss to coat.
  2. Bake for 30 minutes, flipping once.
  3. Remove from the oven, flipping again. Add the vegetable broth. Return to the oven for another 15 minutes.
