40-Clove Chickpeas and Broccoli

Ingredients
- 1 pound broccoli, cut into large spears
- 10 cloves of garlic, smashed
- 1 15-oz can of chickpeas, drained and rinsed
- 2 tsp olive oil
- 1/2 tsp salt
- freshly-ground black pepper
- 2 tsp lemon zest
- 1 1/2 tsp dried oregano
- 1 cup vegetable broth
Directions
- Preheat the oven to 400 degrees F. Place the broccoli, garlic, and chickpeas in a 13x9-inch baking dish. Drizzle them with oil and spray with some non-stick cooking spray. Toss to coat. Sprinkle with salt, pepper, lemon zest, and oregano. Toss to coat.
- Bake for 30 minutes, flipping once.
- Remove from the oven, flipping again. Add the vegetable broth. Return to the oven for another 15 minutes.
