Candied Ginger Shortbread Cookies

Makes about 40 cookies.
I skipped the rolling out and just shaped cookies with my hands. The cookies aren't quite as pretty,
but it's a whole lot quicker.
Ingredients
- 2 sticks (1 cup) butter, softened
- 1/2 cup firmly packed light brown sugar
- 1/2 tsp ground ginger
- 2 cups all-purpose flour
- 1/4 tsp salt
- 3/4 cup finely chopped candied ginger
- confectioner's sugar for sprinkling the cookies
Directions
- Preheat the oven to 300 degrees F.
- Cream together the butter, brown sugar, and ground ginger until the mixture is light and fluffy.
- Add the flour and salt and beat until just combined.
- Beat in the candied ginger.
- Halve the dough, roll out to 1/4 inch thick between sheets of wax paper. Freeze on baking sheets for 10 to 15 minutes or until very firm.
- Remove the wax paper and cut shapes from the dough.
- Place cookies on baking sheets and bake for 25 to 30 minutes or until pale golden brown.
- Let the cookies cool completely and sprinkle them with confectioners' sugar.
