Candied Ginger Shortbread Cookies

I skipped the rolling out and just shaped cookies with my hands. The cookies aren't quite as pretty, but it's a whole lot quicker.

Ingredients

  • 2 sticks (1 cup) butter, softened
  • 1/2 cup firmly packed light brown sugar
  • 1/2 tsp ground ginger
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 3/4 cup finely chopped candied ginger
  • confectioner's sugar for sprinkling the cookies

Directions

  1. Preheat the oven to 300 degrees F.
  2. Cream together the butter, brown sugar, and ground ginger until the mixture is light and fluffy.
  3. Add the flour and salt and beat until just combined.
  4. Beat in the candied ginger.
  5. Halve the dough, roll out to 1/4 inch thick between sheets of wax paper. Freeze on baking sheets for 10 to 15 minutes or until very firm.
  6. Remove the wax paper and cut shapes from the dough.
  7. Place cookies on baking sheets and bake for 25 to 30 minutes or until pale golden brown.
  8. Let the cookies cool completely and sprinkle them with confectioners' sugar.
