Braised Red Cabbage with Apples
This recipe is fantastic! I usually make a double batch because that uses almost an entire red cabbage. This recipe actually tastes better the next day, so it's good to make it ahead of time, just reheat and serve. Source: 1,000 Vegetarian Recipes by Carol Gelles
Ingredients
- 2 Tbsp. butter
- 4 cups shredded red cabbage
- 1/2 cup diced onions
- 2 cups chopped tart apples
- 1/4 cup water
- 3 Tbsp. light or dark brown sugar
- 1 Tbsp. cider vinegar
- 1/8 tsp ground cloves
- 1/8 tsp salt
- 1/8 tsp pepper
Directions
- In a 3-quart saucepan, melt the butter over medium-high heat.
- Add the cabbage and onions; cook, stirring, until wilted, about 3 minutes.
- Add the apples; cook, stirring, until softened, about 3 minutes.
- Add the water, brown sugar, vinegar, cloves, salt, and pepper.
- Cook, stirring, until the liquid is absorbed, about 4 minutes.
