Banana Cake

Ingredients

  • 1/2 cup butter
  • 1 1/4 cup sugar
  • 2 eggs
  • 1 teaspoon soda
  • 4 tablespoons sour cream
  • 1 cup banana pulp, mashed
  • 1 1/2 cups cake flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla

Directions

  1. Preheat oven to 350 degrees F., a moderate oven.
  2. Cream butter and sugar, add eggs, very lightly beaten, and the soda, dissolved in the sour cream.
  3. Beat well; then add the bananas, flour, salt, and vanilla. Mix well.
  4. Bake in well-greased and floured 8-inch square or 9-inch tube pan for 35 to 45 minutes.
  5. Frost with Lemon Butter Frosting or Coffee Frosting.

Mady's notes: Note: I don't use any frosting; it takes away from the flavor of the cake. Note: Double the recipe and use a 9 x 13 or a 10-inch tube. Note: Regular flour can be used instead of the cake flour. Just decrease the flour by 2 to 3 tablespoons.
