Banana Cake

Ingredients
- 1/2 cup butter
- 1 1/4 cup sugar
- 2 eggs
- 1 teaspoon soda
- 4 tablespoons sour cream
- 1 cup banana pulp, mashed
- 1 1/2 cups cake flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla
Directions
- Preheat oven to 350 degrees F., a moderate oven.
- Cream butter and sugar, add eggs, very lightly beaten, and the soda, dissolved in the sour cream.
- Beat well; then add the bananas, flour, salt, and vanilla. Mix well.
- Bake in well-greased and floured 8-inch square or 9-inch tube pan for 35 to 45 minutes.
- Frost with Lemon Butter Frosting or Coffee Frosting.
Mady's notes:
Note: I don't use any frosting; it takes away from the flavor of the cake.
Note: Double the recipe and use a 9 x 13 or a 10-inch tube.
Note: Regular flour can be used instead of the cake flour. Just decrease the flour by 2 to 3 tablespoons.
