Balsamic Marinated Mushrooms
I find these to be extremely tasty. The are a perfect appetizer and keep well for a few days in the fridge.
Ingredients
- 1 pound small mushrooms
- 1/4 cup balsamic vinegar
- 2 Tbsp olive oil
- 1/2 crushed dried oregano
- 1 Tbsp chopped dried parsely
- 1/2 tsp minced garlic
- 1/2 tsp salt (optional)
- 1/2 tsp freshly ground pepper
- parsely for garnish
Directions
- Wash and drim mushrooms. Leave the stems intact.
- Place mushrooms in a skillet. Cover with salted water and boil for 5 minutes. Drain.
- Combine vinegar, olive oil, oregano, parsley, garlic, salt, and pepper. Add to mushrooms.
- Place in a large jar, cover and refrigerate at least 3 hours or overnight.
- Drain. Garnish with parsley.
