Balsamic Marinated Mushrooms

I find these to be extremely tasty. The are a perfect appetizer and keep well for a few days in the fridge.

Ingredients

  • 1 pound small mushrooms
  • 1/4 cup balsamic vinegar
  • 2 Tbsp olive oil
  • 1/2 crushed dried oregano
  • 1 Tbsp chopped dried parsely
  • 1/2 tsp minced garlic
  • 1/2 tsp salt (optional)
  • 1/2 tsp freshly ground pepper
  • parsely for garnish

Directions

  1. Wash and drim mushrooms. Leave the stems intact.
  2. Place mushrooms in a skillet. Cover with salted water and boil for 5 minutes. Drain.
  3. Combine vinegar, olive oil, oregano, parsley, garlic, salt, and pepper. Add to mushrooms.
  4. Place in a large jar, cover and refrigerate at least 3 hours or overnight.
  5. Drain. Garnish with parsley.
